Wild Rice and Mushroom Pilaf

There’s something about the winter time that makes {most of} us crave comfort foods. A lot of the time, comfort food means highly processed food items that don’t leave us feeling the best. However, I am a true believer that that doesn’t have to be the case.

This wild rice & mushroom pilaf is filling, cozy, and perfect for that comfort food craving kind of day. We made this at my 2018 Holiday Party workshop, and even after a year of enjoying this one on the regular, I still go back for more.

Wild Rice & Mushroom Pilaf

Serves 4

Ingredients:

2T olive oil

3 leeks, chopped

4 garlic cloves, minced

3 shallots, diced

3T dried thyme

1/3 cup nutritional yeast

1 cup wild rice

2.5 cups vegetable broth

8 ounces sliced mushrooms

Chives (optional for topping)

Salt & pepper to taste

Directions

1. In a large pot over the stove, heat your olive oil until warm.

2. Add in the chopped leeks, shallots, and garlic and cook for 3-5 minutes, or until translucent.

3. Add in your thyme, nutritional yeast, and wild rice. Stir well and let it start to get crispy for a few minutes.

4. Pour in your vegetable broth and stir continuously for a few minutes.

5. Add in your sliced mushrooms and stir until well combined.

6. Let it simmer on medium heat for about 15-20 minutes, stirring frequently.

7. Once your broth is absorbed and your rice is cooked, you may salt and pepper to taste.

8. Serve immediately or store it in the fridge.

Enjoy!
