Spirulina Energy Bites

I’m a big fan of energy bites, spirulina, and dates. So these are basically all of my favorite things in one! If you’re ever looking for easy snacks to make in advance - these are your new friend! Especially if you have just a little bit of a sweet tooth but don’t want so consume any refined sugars. These little guys may be addicting, but they are filling, easy, and nutritious!

Spirulina Energy Bites

Makes 24 Energy Bites

Ingredients

1 cup pitted dates (about 15 dates)

1/2 cup almonds

2T almond butter

3/4 cup oats

2tsp spirulina (I use Earthrise)

1/2tsp vanilla

1/4tsp salt

Directions

  • Place all ingredients into a food processor and process on high until well combined and a dough mixture has formed. It may take several minutes. Once done, it should be a thick dough that sticks together.

  • Using your hands, roll dough into small bite-sized energy bites.

  • Store in the freezer for 2-3 months or in the refrigerator for 2 weeks. I typically store mine in a large freezer-safe ziplock bag in the freezer and take them out as needed.
