Go-To Simple Green Salad
I always post pictures of meals like the chickpea and dill tacos, summer detox salads, or lentil sloppy joes - yet 9/10 times I am sitting behind a computer screen eating the most simple salad ever. I figured it was time to share one of my daily rituals with you - as this salad is the easiest of the easy, and it’s my go-to when I am in a hurry or just not in the mood to cook.
Go-To Simple Green Salad
Serves 1-2
Ingredients
Salad:
5 cups red leaf lettuce, roughly chopped
8 radishes, sliced thin
1 cup cherry tomatoes, halved
1 avocado, diced
1/4 cup hemp seeds (optional)
Dressing:
3T Dijon mustard
2T honey
Stir/ mix well in a small glass and serve with salad.
Directions
Toss your salad ingredients into a large bowl. If you’re anything like me, you’ll likely use that bowl to eat out of too. Drizzle your dressing on and toss again. Serve immediately.
