S'more Rice Crispy Treats
Ever since trying out Okay Yeah Coffee in Oklahoma City and indulging in their S'mores hand tart, all I want are s'mores. Literally. I'd love to say I was planning on trying to make my own s'mores tart.... but rice crispy treats seemed much easier :)
I never really liked rice krispies growing up, so it seemed odd to me that this even came to mind, but I decided why not, and I'm glad I did! They were super easy to make and made for a nice treat.
I made mine gluten free and vegan, but you could use traditional ingredients and it would turn out just the same (I think)!
Ingredients:
1/2 cup coconut oil
2 - 10oz bags of dandies marshmallows
1 - 8oz box of gluten free graham crackers
4 cups sprouted brown rice crisps
1 cup dark chocolate chips (I use Enjoy Life mega chunks)
1 t salt
Directions:
Line a square or rectangular baking pan with parchment paper and set aside.
Crush all of your graham crackers into small bite size pieces, or process them in a food processor until crushed. Just be careful not to turn them into sand. Set aside.
In a medium sized pot, melt the coconut oil and the marshmallows over medium heat. Stir frequently to prevent it from burning.
Once melted, turn off the heat and add in 4 cups of your rice crisps cereal and all of the crushed graham crackers. Using a spatula, mix until well-combined.
If you want your chocolate chips to be slightly melted, go ahead and add them into the pot and stir. If you don't want them to be melted, you can pour them on top of the treats once you press them into the pan.
Once well-combined, press the mixture evenly into your lined baking pan. If you didn't add the chips already, you can do so now.
Sprinkle with 1 teaspoon of salt and place in the refrigerator until solid.
Cut into squares and serve immediately or keep in an airtight container.
