Detox Fruit Salad

This salad is one of my all time favorites - especially in the summer when I want something light and refreshing. However, I cannot take credit for this recipe. My cousin and I have monthly dinner dates at one of our homes where talk about all of the books we've been reading, geek out over A Course in Miracles, and just talk about life. She is an esthetician [the absolute best] and I think in her words this salad is “skin food!” If you’re ever having one of those days where you’re just feeling kind of “blah,” this salad will be your new best friend [along with a gallon of water].

Detox Fruit Salad

Serves 4

Ingredients

2 stalks celery, sliced
1 honey crisp apple, diced
1/2 cup yellow cherry tomatoes, halved
2 cups spinach/greens, chopped
1/2 cup blueberries
1 avocado, pitted and diced
1/4 cup hemp seeds
3T lime juice

Directions

Place the ingredients in a large mixing bowl and toss. Serve immediately.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
