Banana Bread
I love many things, but banana bread makes the top five.. It was definitely a childhood staple, thanks to my moms personal obsession.
I have made banana bread several different ways, and to be honest most of the time I don't follow a recipe. I just throw some bananas in a bowl and go to town. However, a couple weeks ago I was in a baking frenzy and could not get it to turn out right. So, I did what I always do when I need cooking advice and called one of my good friends and co-raw food chef's, Nicole Diaz.
She sent me her FABULOUS recipe, and I just have to share it with you! I actually just finished making it, and I am a huge fan. It is sugar free, which means you can eat it plain or you could warm it up and drizzle some honey or maple on top, which is absolutely delicious.

Ingredients:
7 bananas (brown)
2 cups gluten free flour
2 T ground flaxseed
2 tsp baking powder
2 T apple cider vinegar
2/3 cup melted coconut oil
1 tsp salt
Optional add in's: walnuts, chocolate chips, dried fruit, vanilla, cinnamon, etc.
Directions:
Preheat the oven to 350 degrees fahrenheit.
Mash 6 bananas in a large mixing bowl. Once mashed, add in all of the other ingredients and mix well. Once mixed, set to the side.
Grease a loaf pan with coconut oil. Then pour in the batter.
Slice the 7th banana in half and place on top of the bread. Press it down into the batter just slightly.
Bake for 20-25 minutes for until a toothpick comes out clean.
